This is definitely the easiest recipe in our series. It takes just a couple of minutes of prep work, and then it’s ready to eat a few hours later. A lot of times, I don’t even shred the chicken - I just eat it straight up as is. Regardless of how you do it, this simple chick recipe is tasty and simple, all while being a healthy choice.
This chicken recipe was inspired by one of our favorite places to eat out. They serve a shredded chicken as one of their options, and I went in search of the recipe for it. While this was technically the recipe that people use, it tastes nowhere near the same as what they serve in the restaurant. Regardless, it’s still tasty, and it’s super easy to make.
As with most of our other recipes, this goes pretty well with most anything that you want to eat it with. Want to add it to rice? Not a problem. Want to make a quesadilla out of it? It’s perfect for that. Want it as a side to anything else that you eat? Go for it. It works with most anything else that you can think of as well.
Also, this recipe can be made to the exact amount that you want. It doesn’t have to be measured perfectly for it to taste good, and it allows for you to make just the right amount whether you’re cooking for 3 or you’re cooking for 10. We always like to have leftovers, so making extra is also simple.
For this recipe, you’ll need a crockpot, chicken breasts, garlic powder, chili powder, cumin, and italian dressing.
How to prepare Shredded Mexican Chicken
Take your chicken breasts, and place them in a crockpot. Add enough italian dressing to cover your chicken. Add about a tablespoon of garlic powder, ½ a tablespoon of chili powder, and a teaspoon of cumin. If you’re not making a lot of chicken (less than 3 breasts) then I would cut that back a bit.
Set the crockpot on high for 4 hours, or low for 7 hours, and you’re set. About 30 minutes before you’re going to eat, you can pull the chicken out of the crockpot (leave the dressing in the crockpot) and shred the chicken. You’ll know it’s ready because it should be super moist and simple to shred.
That’s all there is to it. Once you’re ready to eat, just scoop the chicken out of the crockpot with some tongs, or some other utensil that will allow the dressing to drain off a bit. You’ve now got tasty chicken that can go with most anything you want, and you likely didn’t spend more than about 5 minutes preparing it.
